For Plating you’ll Need:

  • San Sebastian Cheesecake
  • Cooked rhubarb
  • Half raspberries
  • Fresh flowers
  • Small almond pieces

Method:

  1. Make thin slices of cooked rhubarb by placing them between two sheets of parchment paper with a light lemon syrup in between.
  2. Freeze briefly, then cut out a square using a cookie cutter to fit the size of the plate.
  3. Place the San Sebastian Cheesecake at one corner of the plate.
  4. On the rhubarb veil, arrange the raspberries, fresh flowers, small almond pieces and a few lime zest strips.
The result = A fresh, colourful dessert that brings a lighter feel to a classic cheesecake.

Roasted Black Cherries with Pistachios

For Plating you’ll Need:

  • San Sebastian Cheesecake
  • Butter-roasted cherry halves
  • Black cherry coulis
  • Chopped pistachios
  • Fresh flowers
  • Espelette pepper

Method:

  1. Place the San Sebastian Cheesecake in the centre of a beautiful plate. Gently add the butter-roasted cherry halves.
  2. Sprinkle chopped pistachios around the cheesecake to add a crunchy texture.
  3. Arrange a few fresh flowers over the cherries, such as white alyssum, calendula or red bergamot. Sprinkle with a pinch of Espelette pepper.
  4. At the last moment, drizzle the black cherry coulis around the dessert using a small pitcher, creating a circular motion around the plate.

The result: a rich and colourful dessert with contrasting textures and flavours – perfect for a more elevated summer menu.
