San Sebastian Cheesecake!

Mostly known for its caramelised/burnt (or toasted as we like to call it) top, the San Sebastian cheesecake by Emma-Jane’s Foodservice pays homage to the original Basque cheesecake. The jiggly and creamy centre makes for the most decadent dessert. It has stolen hearts and mouths around the globe from Singapore to New York, Australia to where it originated, Spain. These places have helped this flavour earn its title of “Flavour of the Year” presented by the New York Times

Origin

The history of the San Sebastian Cheesecake is rich just like the product.

The beautiful restaurant of La Viña started with humble beginnings. Bought by Eladio Riveria, his Brother Antonio and their wives, Carmen Jiménez and Conchi Hernáez. The hospitality industry was in their family’s blood, when Eladio’s son, by the name of Santi, worked for their restaurant in the bar from a young age. Santi, being born into the industry, became a self-taught, passionate chef who endured many long hours of experimenting in the kitchen on his days off, creating Pintxos (Small snacks) dishes for La Viña. During his time working, the food world started to open up to Spain, giving him products such as cream cheese and other “Modern Food items”.  With training from cooking courses Santi had attended and other communication from books and friends, he was able to learn the science of food and create wonderful dishes, with the Cheesecake being one of them.

Santi had served Pintxos with only the hope that restaurant regulars would like them, to his surprise the cheesecake served kept getting asked for over and over again.

As the global economy was opened up to Spain, La Viña started to gain popularity with tourists on specific Pintxos tours around Spain. Travellers would revel in the delight of the cheesecake which lined the shelves of the bar. In the early 2000s, this cheesecake had become one of Basque’s biggest triumphs and the San Sebastian Cheesecake was loved by all!
